Rat is a group name for the roughly sixty species of the genus Rattus, family Muridae, order Rodentia, with the brown rat, Rattus norvegicus, as the usual reference animal. Weasel names several small members of the genus Mustela, family Mustelidae, order Carnivora — a lineage that also holds otters, badgers, martens and polecats. Telling them apart

Weasel fur is sharply two-toned with a clean border, whereas rat fur grades softly from grey-brown into paler underparts.

Senses and adaptations
Rats lean on smell and on whiskers swept across surfaces to build a tactile map in darkness, and they hear well into the ultrasonic range they also use to communicate. Weasels are scent-led too, but their defining adaptation is geometry: an extremely long thin body with a high surface-area-to-volume ratio. That shape opens rodent tunnels to them and costs them heat, which is why a weasel must feed frequently for its body mass and copes poorly with going without food.
