Salmon is a common name, not a taxonomic rank. Spawning Pacific species transform dramatically, with humped backs, hooked jaws and, in sockeye, deep red bodies with green heads.

Habitat and distribution
Both are anadromous, hatching in fresh water, migrating to sea and returning to spawn. Atlantic salmon use rivers draining to the North Atlantic on both European and North American coasts, with feeding grounds off Greenland and the Norwegian Sea. Pacific species use rivers around the Pacific rim from California and Japan to Alaska and Kamchatka. Landlocked populations of Atlantic salmon exist in lakes such as those of Maine and eastern Canada and complete the whole cycle in fresh water.
Diet and ecological role
At sea both feed heavily on small schooling fish, crustaceans and squid, and the carotenoid pigments in that prey give the flesh its colour. In fresh water juveniles of both take insect larvae and drifting invertebrates. Returning adults largely stop feeding as they move upriver and run down their fat reserves. Both genera perform the same physiological feat twice over, remodelling gill and kidney function during smolting to move from fresh water to seawater and reversing it on return. Olfaction is central to homing, with juveniles imprinting on the chemical signature of their natal stream and adults following it upriver. Vision shifts too, as retinal pigments change between marine and freshwater phases. These adaptations are shared, which is part of why the common name spread across two genera in the first place.
